Vietnamese cuisine has always been inseparable from geography, from the saline flavours of the Central coast and the elegant restraint of the North to the generous abundance of the South. At La Sen, tradition is not something to be reinvented, but understood, preserved and expressed with renewed clarity.

The restaurant’s culinary rhythm follows the seasons. Fragrant herbs and vegetables arrive from the resort’s organic garden, often harvested shortly before service, while others are sourced from Trà Quế, Hội An’s 400 year old farming village. Sustainably caught seafood and partnerships with regenerative farms deepen this connection to the surrounding landscape.

Nothing is considered incidental. Shrimp shells are simmered into deeply flavoured broths, while herb stems and blossoms are replanted for another harvest. It is a philosophy of respect rather than excess, where every ingredient is considered in its entirety.

Having spent more than a decade immersed in Vietnamese culinary traditions, Executive Chef Heath Gordon approaches contemporary technique with restraint. Sous vide cooking, emulsification and dehydration are employed not to disguise familiar flavours, but to bring greater precision to texture and clarity to taste.

The Charcoal Grilled Black Cod Wrapped in Banana Leaf captures this philosophy beautifully. Inspired by Hanoi’s Chả Cá Lã Vọng and served with ST25 rice and house made fermented shrimp paste, the dish layers charcoal smoke, fermentation and fresh herbs into something immediately recognisable yet elegantly composed.

Elsewhere, Silken Tofu with Mushroom Sauce is delicately aerated into an almost cloud like texture, allowing the earthy purity of mushroom to remain the defining note.

Yet perhaps La Sen’s most compelling expression of luxury is what remains unseen. Behind each plate is an ecosystem of farmers, fishermen, artisans and culinary traditions shaped over generations. Here, the chef becomes less a performer than a storyteller, allowing ingredients and memories to speak for themselves.
