At Banyan Tree Lăng Cô, Saffron presents Thai cuisine with clarity rather than ornament, drawing on traditional technique, exacting balance and ingredients from Vietnam’s central coast. Its three-star Thai SELECT distinction places the restaurant at a rare intersection of culinary authenticity, regional character and contemporary refinement, without losing its soul.

The approach to Saffron is almost ceremonial. The road climbs through Banyan Tree Lăng Cô’s forested hills before the view opens suddenly towards the bay, a broad sweep of water framed by mountains. Arrive at dusk and the transition is especially evocative: daylight softens, the coastline recedes into silhouette, and dinner begins in a setting that feels both remote and composed.
Yet Saffron’s distinction lies not in scenery alone. In 2026, the restaurant became the first and only address in Vietnam to receive the highest three-star Thai SELECT certification from Thailand’s Ministry of Commerce. The recognition considers far more than fidelity of flavour, encompassing ingredient quality, technique, service and atmosphere.

The concept began in Phuket in 1995 as Banyan Group’s signature Thai dining experience. Rather than appearing at every Banyan Tree address, Saffron is reserved for properties capable of sustaining its exacting culinary and hospitality standards. In Lăng Cô, that responsibility rests with Chef Nuntthawut Poungpouw, whose cooking is grounded in the architecture of Thai taste. Acidity arrives through lime and tamarind, herbs lend lift and perfume, chilli brings warmth, while savoury depth gives each dish its centre of gravity. The pleasure comes from the tension between these elements, and from the precision required to keep them in balance.

This is food that resists blunt intensity. Sweetness tempers heat. Citrus cuts through richness. Fragrance softens spice. Each plate is layered, but never crowded, allowing the essential character of Thai cuisine to remain vivid and legible.
Chef Nuntthawut’s approach to authenticity is equally measured. Traditional recipes and techniques form the foundation, yet the restaurant does not attempt to transplant Thailand wholesale onto the central coast. Local seafood and seasonal produce from the region are folded into the menu with sensitivity, interpreted through a distinctly Thai vocabulary rather than treated as novelty.

“Our philosophy is for every guest at Saffron to feel as though they are dining in Thailand,” he says. “That comes not only from traditional recipes and authentic techniques, but from choosing exceptional local ingredients that allow those Thai flavours to express themselves naturally.”
It is in this balance between origin and setting that Saffron finds its most compelling identity. The restaurant remains unmistakably Thai, yet Lăng Cô is present in the freshness of the ingredients, the cadence of the evening and the vast landscape beyond the table. Refinement here is not performed. It emerges quietly through flavour, service, atmosphere and the assurance of a restaurant that knows exactly what it wants to say.
