It is a night of decadence at Ocean Club with world-renowned Champagne Billecart-Salmon paired with an artfully crafted five-course menu.
Billecart-Salmon is known for crafting Champagne that's elegant, full-bodied and complex. Guests will enjoy a champagne reception with canapés, followed by a seated dinner and a guided presentation by Billecart-Salmon's guest host.
The five courses menu includes dishes such as foie gras and truffle cream puffs, fig jam, balsamic vinegar caviar; Hokkaido scallops crudo, seaweed crackers, mango sauce, soyo ikura; sous-vide turbot, black sesame mousseline, cashew crust, bouillabaisse sauce, apple espuma; milk fed veal tenderloin, swiss chard & confit heirloom carrot, apple cider, morel mushroom ragù; pavlova, lime curd and berries –all paired with a special Champagne selection by the Billecart-Salmon's guest host.
