Premium cuts, with a particular focus on dry-aged beef, are sourced from carefully selected suppliers and aged under tightly controlled conditions at PRIME before being precisely trimmed, cut along the grain and grilled over live fire to preserve structure and true flavour. Cooking is deliberately restrained, allowing each cut to express its character without unnecessary embellishment.

At PRIME, dry-aging is treated as an expression of balance rather than a fixed formula. The 45-day aging reveals a refined harmony of tenderness and flavour, approachable yet composed. The 65-day aging moves deeper, offering greater intensity, savoury complexity and a longer, more resonant finish, crafted for guests seeking a more defined character.
