The Albion by Kirk Westaway
Fine Dining Above Saigon’s Skyline

Tran Nguyen

Perched on the 23rd floor of Hôtel des Arts Saigon – MGallery Collection, The Albion unfolds not as a formal dining room, but as a refined social table above the city. Floor-to-ceiling windows open Saigon into view, allowing the skyline to become part of the narrative dynamic by day, cinematic by night while the room itself remains composed, warm and assured.

The Albion is the first international expression of Kirk Westaway, the two-Michelin-starred chef known for redefining British cuisine through clarity and restraint. His approach avoids ornamentation, favouring precision and balance, where flavour is allowed to speak without excess. In Saigon, that philosophy translates into a modern European menu anchored in British sensibility, yet entirely at ease in its surroundings.

In partnership with Head Chef Christopher Clarke, whose background spans kitchens such as Frantzén and Core by Clare Smyth, the kitchen presents dishes that feel generous yet disciplined. Produce from organic farms in Đà Lạt is paired with carefully selected international ingredients, forming a menu guided by freshness rather than flourish. Plates are designed for sharing langoustines with cocktail sauce, roast lamb with mint, roast beef with horseradish cream encouraging conversation as much as appreciation.

Seafood arrives with beautiful simplicity, from oysters to standout fish and shellfish from Japan, while signatures such as The Albion Tomato organic Đà Lạt tomatoes with housemade ketchup and basil-orange sorbet and a refined Eton Mess reveal the kitchen’s understated wit. Each dish feels light, intentional and complete.

The room reflects this same ease. A historic British bar anchors the space, surrounded by rich timber, marble surfaces and art deco inflections that nod gently to the hotel’s character. With just 60 seats, the atmosphere remains intimate, polished without ceremony.

In 2025, The Albion was named Highly Recommended of Best Fine Dining Restaurant at the Gourmet Vietnam Awards, recognising a restaurant that resists excess in favour of confidence. Here, British heritage is not revisited it is recalibrated, elevated above the city, and quietly assured in its place.
