This time, a masterful feat of Butcher’s Block from Raffles Singapore will be shown together with Rumari, highlighting the curation of polished contemporary culinary. This upcoming joint event is set to delight the senses, crossing borders, and exceeding expectations.
The culinary director, chef Gaetan Biesuz, welcomes its sister hotel’s accomplished Hawai’ian culinary prodigy, chef Jordan Keao, from the hotel’s open-fire kitchen, Butcher’s Block. Inspired by his Hawaiian heritage, Keao’s passion for wood-fired cooking and his expertise in butchery come together to create a unique culinary experience. He skillfully blends the art of butchering with contemporary techniques over an open fire, resulting in a unique smoky delight.
Overlooking the breathtaking view of Jimbaran Bay, the next “Rumari and Friends” four-hand dinner at Raffles Bali offers an upscale dining experience for discerning diners and innovative gastronomy enthusiasts. Rumari and Butcher’s Block share a deep commitment to sustainability, prioritising respect for nature and the quality of their ingredients. Rumari champions this by sourcing 80 per cent of their ingredients from local farmers and producers, a practice they take great pride in. Adding to their achievements, Rumari holds the prestigious distinction of Krug Ambassade and consecutively earned the “Award of Excellence” from Wine Spectator in 2022 and 2023.
Meanwhile, Raffles Singapore’s grill restaurant embodies the sustainability approach by fostering a deep connection to nature and tradition by utilising whole animals, minimising waste in the process. The restaurant heightens its devotion by processing the produce with quality wood-fire techniques and seasonal ingredients.
The exclusive collaboration dinner between Rumari and Butcher’s Block kicks off on 5 and 6 April 2024 at Rumari, Raffles Bali. Continuing this culinary exchange, two more dinners will be held on 10 – 11 May 2024, where Chef Gaetan Biesuz will showcase his expertise at Butcher’s Block, Raffles Singapore.
