Set on the 26th floor of Centec Tower, DẠ夜 Dining presents a contemporary expression of Chinese cuisine shaped by Vietnamese terroir and guided by technical precision. As evening settles over Ho Chi Minh City, the focus turns to clarity of flavour, balance, and disciplined execution.
Under the direction of Chef Michael Luong, the kitchen approaches modern Chinese cuisine with restraint and confidence. Classical technique forms the foundation, while local ingredients bring freshness and nuance. The result is cooking that feels rooted yet progressive—composed rather than ornamental.

At the heart of the menu stands The Duck—a fourteen-day dry-aged truffle roasted duck served in three chapters. Crisp skin wrapped in house-made pancakes introduces the sequence with textural precision. It is followed by charcoal-cooked duck rice, enriched by depth of fire and lifted by fresh wasabi. The progression concludes with a clear herbal duck soup, restoring balance and demonstrating command of stock. Together, the courses reflect patience, control, and respect for the ingredient.

Seasonal additions further highlight the kitchen’s technical discipline. The Eel Soup layers freshwater eel and sea cucumber within a clear chicken consommé, brightened subtly by Asian pear and winter melon. Light yet deeply structured, it underscores the precision required in broth-based cuisine. Equally refined, The Abalone pairs tender abalone with foie gras and oolong, balancing richness with tannic clarity and deliberate proportion.

The atmosphere at DẠ夜 remains carefully composed. Curated performances and a considered soundscape enhance the rhythm of the evening without overwhelming the cuisine.
