Suspended above the city on the 26th floor, DẠ夜 Dining reshapes Chinese cuisine into a nocturnal experience of flavour, movement, and mood. Here, modern interpretations of heritage dishes unfold alongside curated performances and expressive cocktails, creating evenings that feel composed, immersive, and distinctly reflective of Saigon after dark.

Rising above the cityscape within Centec Tower, DẠ夜 Dining reveals itself as night descends. The transition is intentional. From the moment guests arrive, the atmosphere shifts from urban pace to something more deliberate, shaped by light, sound, and a carefully orchestrated sense of anticipation.

The culinary direction at DẠ夜 balances memory with invention. Modern Chinese cuisine is approached with technical precision, allowing familiar flavours to be reimagined without losing their emotional resonance. The centrepiece of the menu is the fourteen day dry aged Truffle Roasted Duck, served across three chapters. It begins with duck paired with bánh pía and a house signature sauce, followed by charcoal cooked duck rice lifted by fresh wasabi, and concludes with a clear herbal duck soup that restores balance. Surrounding this are dishes that invite curiosity, including prawn mousse on crisp youtiao, Hokkaido scallop with star fruit and tobiko, and squid and pork dumplings enriched with foie gras sauce. Each plate is designed to feel comforting yet exploratory.

The bar continues the narrative with equal intention. Under the direction of award winning Beverage Director Đạt Nguyễn, cocktails are composed as seasonal expressions inspired by Chinese folklore and local ingredients. Rather than fixed signatures, the menu evolves, encouraging return visits and allowing each chapter to feel new.

What truly distinguishes DẠ夜 is its integration of performance. Curated by Fanglanx, the weekly programme assigns each evening a distinct identity. Cantonese Night celebrates pop nostalgia and live music. Chinoise Night blends Eastern and Western movement. Mystique Friday introduces theatrical encounters and illusion. Oriental Saturday draws from historical song and dance, while Smooth Operator closes the week with jazz infused elegance. Periodic one night productions further extend this approach, merging cuisine, costume, and choreography into immersive storytelling.
