The name “NÚC,” drawn from Vietnamese vernacular bếp NÚC, refers to a kitchen. It honors the unseen: the simmer, the scent, the stillness before serving. Gastronomy with Nature in Mind

At the core of NÚC Kitchen & Bar’s culinary approach is a deep reverence for the rhythms of the natural world. Every element of the kitchen is guided by the principle of Gastronomy with Nature in Mind, a phrase that moves beyond buzzword to become practice, precision, and poetry. 

Chef-driven, seasonally curated menus rely heavily on local ingredients, many of which are fermented, preserved, or crafted in-house. Tamarind, chilies, tropical fruits, indigenous herbs, each is treated not as a trend but as a partner in storytelling. 


This partnership is reflected in their “Quiet Notes” tasting menu, a thoughtfully curated eight-course seasonal journey where each dish is a “note” in a subtle, emotional composition. Inspired by the philosophy Gastronomy with Nature in Mind, the menu celebrates local and seasonal ingredients, many of which are fermented or house-made, offering a refined yet grounded culinary experience. Each course, from Note #1 to Note #8, is an expression of flavor, texture, and mood, crafted to evoke a specific emotion and to invite diners into a slower, more mindful way of tasting. 

The menu begins with the gentle brininess of shellfish paired with mandarin and coconut heart, evoking the quiet clarity of a seaside sunset. It progresses through soulful, nostalgic flavors like tender grouper with shiso and shallot, and sweet scallop with earthy potato and seaweed, deep and contemplative. The Mediterranean freshness of hamachi with clam and fennel gives way to the bold warmth of charcoal-grilled chicken with chili and honey, a dish that feels like young love: tender, crisp, and intense. Rich wagyu with herbaceous beans and aromatic perilla conjures the poetic atmosphere of a rainy evening in Tokyo, while a minimalist tamarind and salt palate cleanser offers a soft interlude, akin to drifting clouds. The final note, green rice with coconut and pandan, closes the experience with a sense of nostalgia and lightness, like a gentle memory that lingers. 

At NÚC Kitchen & Bar, the wine list is compact yet thoughtfully curated, featuring white, red, rosé, sweet, and sparkling wines that harmonize with the seasonal, locally rooted menu. Each bottle is selected to evoke emotion and enhance both food and atmosphere, whether sipped solo at the bar or shared over dinner. At NÚC Kitchen & Bar, cocktails are seasonal stories in a glass — crafted from local herbs, fermented notes, and house-made syrups. Playful creations from NÚC’s Creation menu like Bắt Con Cọp, Canh Chua Bếp NÚC, and Buổi trưa ăn bưởi chua blend creativity, nostalgia, and respect for Vietnam’s landscapes and traditions. 

Less Waste, Less Noise — Just Reverence

NÚC Kitchen & Bar’s culinary mindfulness extends far beyond flavor. Its pursuit of zero-waste principles is as essential to its craft as the seasoning that brings a dish to life. Vegetable skins and bones are repurposed for stocks. Leftover herbs are fermented into house-made vinegars. Plastic is absent from the kitchen. Even portion sizes are calibrated with care, just enough to invite attention, appreciation, and the desire to share, rather than overindulge.

Sustainability here is a quiet, consistent discipline embedded in every decision from sourcing seasonal, local produce to minimizing carbon emissions through close partnerships with nearby farmers and fishers.
