Nikura and Pisco Hana introduce a contemporary Nikkei journey in the heart of Saigon, where cuisine, cocktails, music, and emotion intertwine through two immersive experiences at JW Marriott Hotel & Suites Saigon.

Nikkei cuisine has never been simply a matter of fusion. Born from more than a century of exchange between Peru and Japan, it carries the memory of migration, adaptation, and shared sensibilities. In this dialogue, Peru brings brightness, heat, acidity, and generosity; Japan offers restraint, discipline, clarity, and technique. At Nikura and Pisco Hana, that balance is reimagined for Saigon through two interlinked expressions: one led by the kitchen, the other by the bar.

Created by Chef Ivan Casusol, Tiradito Concha reinterprets Japanese sashimi technique through the vibrant heat and depth of Peruvian peppers, delivering a bold yet refined umami-driven experience.

Nikura is the culinary heart of the experience. Led by Peruvian chef Ivan Casusol, the restaurant brings together Japanese technique, Peruvian ingredients, and local Vietnamese produce in a menu that feels both precise and vivid. The dishes are shaped by umami, citrus, spice, and savoury depth, with key Peruvian ingredients such as aji amarillo and aji panca adding character to familiar Japanese forms. One defining creation is Tiradito Concha, where sashimi technique meets the vibrancy of Peruvian chilli, creating a dish that is clean in structure yet bold in emotion.

Vivid Peruvian accents intertwine with Japanese minimalism at Nikura, creating a space that feels both energetic and emotionally immersive.

The space reflects the same duality. Japanese minimalism gives Nikura a sense of calm, while Peruvian accents and up-tempo South American sounds bring movement, colour, and warmth. It is not designed only as a restaurant, but as a place for open-minded guests to gather, linger, and engage with culture beyond the plate.

Created by Bar Manager Nguyễn Hữu Phú, Tiger Milk draws inspiration from Peru’s iconic leche de tigre sauce and reimagines it through an inventive cocktail expression.

Pisco Hana extends this journey into the language of cocktails. Guided by Bar Manager Nguyễn Hữu Phú, the drinks programme draws from Japanese fruits, flowers, and spirits, then layers them with Peruvian spices and seasonal Vietnamese ingredients. Each cocktail is built with modern craft techniques, moving through top, middle, and base notes like a carefully composed story. The bar also embraces low-ABV and non-alcoholic creations, reminding guests that flavour, rather than alcohol alone, is the true centre of the experience.

Pisco Hana reflects the balance between Peru’s vibrant spirit and Japan’s understated elegance, where the bar becomes a stage for contemporary cocktails and layered emotions.

Among its signatures, Tiger Milk best captures the bar’s identity. Inspired by leche de tigre, the iconic sauce associated with Peruvian ceviche, the cocktail transforms a culinary reference into a playful, unexpected drink. It does not imitate the dish directly, but translates its spirit through texture, garnish, and imagination.

What makes Nikura and Pisco Hana compelling is the way they converse with each other. Guests may begin with cocktails before dinner, move from Nikura’s dining room into the rhythm of Pisco Hana, or enjoy small bites from the restaurant alongside drinks at the bar.
