The first Krug Ambassade in Indonesia, Rumari, continues to impress with its innovative offering and shows no sign of slowing down. This time, the signature restaurant of Raffles Bali gears up for another memorable Four Hands dinner under its ongoing “Rumari and Friends” series, teaming up with Victor’s Fine Dining. Expect a gastronomic evening like no other as Rumari welcomes the culinary maestro, chef Christian Bau, all the way from Germany.
For two days only (24 and 25 May 2024), the “Rumari and Friends” Four Hands dinner with the three Michelin-starred Victor’s Fine Dining will present an exceptional tasting menu for guests to indulge in. Discerning diners are in for a unique experience that unites the talents of two acclaimed chefs who fuse their distinct culinary styles and artistic flair.
True to its name, Victor’s Fine Dining has become the ever-evolving standard of fine dining thanks to its head chef-owner. Since taking the helm as the head chef and proprietor, chef Bau has been recognised for his gastronomic innovation and prowess which led him to his first Michelin star just a year after taking the reins. The accolade also bestowed him another celebrated moniker as Germany’s youngest three-star chef, achieved within seven years.
Chef Bau is known for his ardour in blending Eastern and Western culinary flairs. Inspired by the Far East, his signature style, bau.stil., utilises French products, which are then processed with Japanese techniques and traditions. Diners will find the epitome of French haute cuisine and the subtlety of Japanese kaiseki when savouring dishes such as Salmon Tartelette with char caviar & myoga, Rouget Barbet (Aburi) with daikon, kimizu & ponzu, as well as Tuna Toro & Kampachi with shoyu, wasabi, and kinome.
Meanwhile, the host restaurant showcases culinary director Gaetan Biesuz’s masterful interpretation of contemporary Southeast Asian flavours. Savour Rumari’s authentic and bold tastes, crafted with organic ingredients that follow the 80/20 rule, ensuring 80 percents of produce is sourced locally.
The establishment’s globally recognised wine collection further elevates the experience. Notably, it boasts the distinction of being the country’s first Krug Ambassade and has received consecutive “Awards of Excellence” from Wine Spectator in 2022 and 2023. “Like a well-crafted meal, the bond that are created through Rumari and Friends is an odyssey of diverse flavors and cultural fusion, creating a delightful symphony of shared experiences,” states the chef.
