The acclaimed sister Hyatt hotels, Alila Villas Uluwatu and Park Hyatt Jakarta work hand in hand to deliver an extraordinary collaboration series for discerning guests and diners. Both hotels have their esteemed chefs and mixologists for kitchen and bar takeovers in four respective venues throughout April and May 2023.
The takeover at Alila Villas Uluwatu will take place at CIRE Restaurant and Sunset Cabana Bar. Meanwhile, Park Hyatt Jakarta will welcome chefs and mixologists from Alila Villas Uluwatu to take over Dining Room and KITA Bar.
Japanese Feast in Uluwatu
With the Indian Ocean as the backdrop and the venue’s warm milieu, savouring Pan-Asian and Mediterranean-inspired dishes at CIRE Restaurant has always been gratifying. This time, the restaurant takes diners to another part of the world by letting KITA 喜多Restaurant’s Japanese executive sous chef, Takeumi Hiraoka, handle the kitchen’s steer.
Poised on top of Park Hyatt Jakarta property, KITA 喜多Restaurant has gained recognition through the authentic taste of contemporary Japanese cuisine. It is only a matter of time before the masterful hands behind the culinary creations share their excellence. Hence, chef Takeumi will take it as his culinary mission to deliver the restaurant’s specialities. Highlighting his signature dishes as an exclusive menu at CIRE Restaurant, such as Lobster Tempura, Salted Seafood Soba Noodles, and Nigiri Sushi.
His global experiences include being head sushi chef at a restaurant in Tokyo, executive chef at a restaurant in Baku, Azerbaijan, and the man behind an award-winning restaurant in Qatar, as well as the Japanese restaurant, SORA, at Park Hyatt Doha, warranting a set of world-class flavours for gourmands.
The kitchen takeover at CIRE Restaurant will be held on 10 April 2023 for dinner only and 11 – 13 April 2023 for lunch and dinner.
Sunset Cabana Bar Goes to Jakarta
The bar takeover will be commenced by trading skilled mixologists from Alila Villas Uluwatu and Park Hyatt Jakarta. As KITA Bar’s mixologist strives to serve its finest signature concoctions at Sunset Cabana Bar, it is only natural for Alila Villas Uluwatu’s sought-after bar to reciprocate and present its creations at KITA Bar. The bar’s mixologist, I Putu Wirawan, will pour his passion for mixology into his masterpieces to Park Hyatt Jakarta’s discerning guests.
Deriving from well-known myths and legends worldwide, guests can have a refreshing or uplifting cocktail that captures the magical experience of Aladdin, the beauty of the Holy Grail, or a unique oceanic melange in a sea shell. Putu’s innovative take on beverages is evidence of his brilliance as the head of the mixology at Alila Villas Uluwatu since 2011.
KITA Bar’s takeover by Putu of Sunset Cabana Bar is available for a day only on 5 May 2023.
KITA Bar Comes to Uluwatu
The liquid artisan, Agustin Da Sambiagio, brings Jakarta’s rooftop sanctuary craft cocktails to the cliff-hanging bar at Alila Villas Uluwatu. Embodying the capital city’s lively and spirited ambience, KITA Bar at level 36 of Park Hyatt Jakarta has successfully put itself under Jakarta’s bar scene spotlight. For one day only, Bali’s residents and visitors will get to taste the exquisite concoctions by the KITA bar’s mixologist at Sunset Cabana Bar.
Nestled on top of the cliff edge overlooking the Indian Ocean, guests can expect a leisure hangout soothed by the sea breeze while sipping a special cocktail such as Mimika Treasure which includes bung apala and kemukus-infused vodka or Snake Martini that mixes Martini with salak sous-vide vodka, sake, and white vermouth. With everything he has learnt at a couple of the world’s esteemed bars from South America and Southeast Asia, guests are in for a refreshing cocktail session rich in flavour and technique.
The Sunset Cabana Bar’s takeover by Agustin Da Sambiagio of the KITA Bar will be held on 11 May 2023 for one day only.
A Taste of Bali in Jakarta
Balinese delicacies take centre stage at the Dining Room, Park Hyatt Jakarta, as chef Harley from Alila Villas Uluwatu’s The Warung delivers vibrant nourishment to the table. Like its culture, Bali also has abundant regional dishes from every corner of the island. Thus, it is natural for The Warung to bring Balinese culinary abundance for Jakartan to taste as the closure of Alila Villas Uluwatu and Park Hyatt Jakarta’s collaboration series.
Having served as chef de partie at the oceanfront restaurant since 2009, I Putu Agus Harley Wijaya or chef Harley, will serve a plethora of Balinese entrees, mains, and desserts with highlights like charred slow-braised pork ribs, grilled marinated duck, and Balinese rice cakes. Also, its must-try signature assorted Balinese sambals are served to enrich the sensation.
