Villa Le Corail, A Gran Meliá Hotel, the luxurious seafront resort nestled on the serene shores of Fairy Mountain Bay, will continue to raise the bar for fine gastronomy in Vietnam this May, as it unveils a series of exciting new experiences at Hispania Nha Trang, its signature Spanish restaurant and the first Asian dining destination by Chef Marcos Morán, the fifth-generation maestro from the iconic Casa Gerardo – the first restaurant in Spain to be awarded a Michelin star. 

Ever since it made its debut in 2023, Hispania Nha Trang has made waves in the Southeast Asian culinary scene. Its original “100-Year” menu blends time-honoured Spanish recipes with modern techniques, enlivened with Vietnam’s fresh and seasonal local ingredients. Now, this exceptional restaurant will be elevated to even greater heights with the launch of a revitalised menu, the elegant Hispania Terrace, and a one-of-a-kind “Four Hands Dinner”.

Savour Chef Marcos Morán’s Sensational New Menu

The refreshed menu at Hispania Nha Trang will showcase the flavours and fragrances of Spain, including many authentic regional dishes. Discerning diners can embark on a culinary journey with the Chef’s Tasting Menu, which includes specialties such as Salpicón de Bogavante y Langostinos (a vibrant seafood salad of lobster, monkfish and prawns), Lingote de Cochinillo Segoviano (a succulent main course of Segovian-style slow-roasted suckling pig with celeriac and eggplant), and Naranja Valenciana, Citricos y Merengue (a wonderfully fresh dessert made from Valencian oranges). With five- or eight-course options and dedicated wine pairings, this tasting menu will transport guests on a multi-sensory adventure to the Mediterranean coast.

Alternatively, Hispania’s revitalised À La Carte Menu highlights many of Chef Marcos’ iconic creations, brought to life with the finest imported ingredients and fresh, sustainably sourced Vietnamese produce. A selection of enticing Entrantes (starters) includes Ensaladilla Rusa (Hispania’s version of the timeless Spanish salad with potato, carrot, egg and tuna belly from northern Spain) and Nuestra Croquetas de Jamón Iberico (croquettes crafted using 100% Iberian ham), a signature Sopa (Soup), Crema de Marisco with seafood, fish and crab meat, and Arroces (rice dishes), including the classic Spanish Paella.

Guests can also savour the finest delicacies from land and sea, with a choice of Mariscos (fish & shellfish) and Carnes (meats) cooked on the Josper Grill. Discerning diners should not miss the Mero Asado (locally caught grouper with pickled chicken sauce, leeks and hazelnuts), Entrecote de Rubia Gallega (blonde sirloin steak from Galicia, the historic region of northwest Spain, complemented with potato espuma and piquillo pepper), and Presa Ibérica Asada (Spain’s famous Iberico pork, grilled to perfection and served with seasonal vegetables and mustard). And of course, every meal can end on a sweet note with a choice of Postres (desserts), including Tarta de Quesos Españoles (Spanish cheesecake), and a selection of premium Spanish cheeses.

Alfresco Elegance on the New Hispania Terrace

This May 25th, Hispania Nha Trang invites hotel guests and visitors to the launch of the Hispania Terrace, an elegant new alfresco venue that frames spectacular views of Fairy Mountain Bay. Located next to the resort’s infinity pools, this is a stylish and sophisticated setting where guests can sit back, socialise, savour traditional tapas and sip cool drinks – including fine wines and refreshing Spanish sangria.

Spanish society revolves around the shared joy of fine food, family, friendship and fiesta. Hispania Terrace will bring this Iberian spirit to life by breaking down the boundaries of formal restaurant dining and creating a more casual atmosphere where loved ones can spend quality time together. Exclusive “Four Hands Dinner” with Spanish Culinary Icons Marcos Morán & Adrián Mancheño

For a truly extraordinary epicurean experience, diners should not miss the exclusive Four Hands Dinner on 24 May, crafted by Chef Marcos Morán and Chef Adrián Mancheño. Chef Marcos is a culinary icon – the Executive Chef of Michelin-starred Casa Gerardo, which has 130 years of history, and head of the Hispania restaurant brand which now has locations in London, Brussels and Nha Trang. He will collaborate with Adrián Mancheño, Executive Chef of Hispania Brussels, which has been recognised by the Gault & Millau and Michelin guides. His training at Casa Gerardo, Restaurante Coque, and El Celler de Can Roca has shaped his distinctive style, which is defined by bold creativity and refined precision. Together, they will craft an exclusive 10-course tasting menu which blends tradition and innovation.

We like to bring in the most appreciated products from Spain, like premium meats and olive oil, but at the same time leverage the most representative products of the land where the hotel is located such as sea urchin, lobster or vegetables from here in Nha Trang.
