Vietnam’s First-Ever Spanish Gastronomic Showcase

On the sun-drenched shores of Phu Quoc Island, Regent Phu Quoc is set to unveil an unprecedented culinary celebration: An Ode to Spain, a week-long gastronomic journey that brings together two MICHELIN two-star chefs, Spain’s most respected culinary artisans, and the resort’s acclaimed culinary team for a landmark event unlike any previously seen in Vietnam.

At the heart of Regent Phu Quoc’s dining philosophy is an exceptional team of culinary talents led by Executive Chef Francesco Andreoni. Originally from Milan, Chef Francesco brings more than two decades of experience from some of the world’s most prestigious hotels and restaurants. Alongside him is Andy Huynh, Chef de Cuisine of Oku, whose journey from Dak Lak to California and training under Nobu helped shape the refined Japanese-French identity that defines Regent’s signature restaurant today.

They are joined by Executive Sous Chef Huan Tran, whose culinary vision draws inspiration from the rich diversity of Vietnam’s regional cuisines, and Executive Pastry Chef Duyen Nguyen, whose creations blend classical French pastry craftsmanship with a distinctly artistic sensibility.

Designed as an immersive exploration of Spain’s rich gastronomic heritage, An Ode to Spain unfolds across a series of distinctive experiences, each highlighting a different facet of the country’s celebrated dining culture.



The festivities begin on 11 June at Ocean Club with Amor y Sabor: The Art of Tapas, an elegant beachfront evening dedicated to Spain’s beloved small plates tradition. Renowned tapas master Ager Urigüen joins David Montero and Chef Francesco Andreoni to curate a vibrant culinary experience, complemented by the live carving of premium Ibérico ham throughout the evening.

The pinnacle of the week arrives on 12 June at Oku with what promises to be one of Vietnam’s most significant culinary events of the year. An Ode to Spain: A Six-Hands Dinner brings together MICHELIN two-star chefs Javier Olleros and Benito Gómez in a rare collaboration with Oku’s Chef de Cuisine Andy Huynh.



In an intimate and highly curated setting, the three chefs present an eight-course tasting menu that unfolds as a culinary dialogue across regions, traditions, and philosophies. Guests will journey through Chef Javier’s evocative interpretation of Galicia, experience Chef Benito’s contemporary expression of Andalusia, and discover Chef Andy’s precise fusion of Japanese technique and Spanish inspiration. The result is a remarkable showcase of the creativity, diversity, and evolution of modern Spanish gastronomy.

On 13 June, the celebration moves to Rice Market with La Paella: A Spanish Fiesta, a vibrant reimagining of Regent Phu Quoc’s signature night market. Led by chefs Javier Olleros, Ager Urigüen, and David Montero alongside the resort’s culinary brigade, the evening centers around Chef David’s Valencian and seafood paellas. Live Ibérico ham carving by Alejandro, an abundant selection of traditional Spanish specialties, premium cured meats and cheeses, and a refreshing sangria station complete the festive atmosphere.



The week concludes on 14 June with a relaxed seaside gathering at Ocean Club. Guests can savour signature tapas by Chef Ager, dual paellas from Chef David, and an array of Spanish classics, including Chef Francesco’s interpretation of octopus a la gallega, as the celebration draws to a memorable close against the backdrop of the ocean.

Complementing the dining experiences is a curated series of masterclasses hosted at Rice Market on 9, 11, and 12 June. Carved in Spain invites guests into the fascinating world of jamón, led by renowned expert Alejandro Paadín, who explores the traditions and craftsmanship behind Spain’s iconic cured ham culture.



In From Valencia with Fire, Chef David Montero shares the secrets behind authentic paella-making, offering insight into one of Spain’s most beloved culinary traditions. Meanwhile, A Journey Through Spain’s Wine Vineyards sees sommelier Alejandro Paadín guide guests through Spain’s most distinctive wine regions, accompanied by a thoughtfully curated selection of artisanal Spanish cheeses.
