From hotel kitchens in Houston to multi-outlet leadership in Ho Chi Minh City, Chef Tran Quoc Dat has built a career around turning culinary ideas into enduring operations. At Lumiere F&B, he combines creative direction with strategic discipline, guiding eight outlets through a thoughtful balance of flavour and performance.

For Chef Dat, a restaurant begins long before the first plate reaches the dining room. It starts with the architecture of the kitchen, the logic of its systems and the people entrusted to bring a concept to life. Throughout his career, he has repeatedly taken on roles that require more than culinary execution, from developing menus and designing workflows to recruiting teams, managing costs and establishing operational standards.

Before returning to Vietnam’s hospitality scene, he studied Hotel and Restaurant Management at the University of Houston. His early years in the United States placed him inside the kitchens of Hilton NASA Clear Lake, Hilton University of Houston and Papas Bros Steak House. These roles introduced him not only to menu development and food preparation, but also to inventory, equipment, banqueting and staff supervision.

Returning to Vietnam, Chef Tran Quoc Dat moved through some of Ho Chi Minh City’s most recognisable hospitality kitchens, including the Majestic Hotel Saigon and New World Saigon Hotel. Later positions at Eight Four Collective, Urban Kitchen + Bar and Guru Hospitality Group allowed him to work more directly with restaurant concepts, refining menus while developing the systems needed to support them.

His influence is often most visible during periods of transition. At Urban Kitchen + Bar, his work on menu direction and kitchen organisation contributed to a reported 25 per cent increase in revenue. At Blanc de Blancs Saigon, he helped shape the restaurant from its earliest stages, overseeing kitchen design, menu creation, recruitment, training and cost control.

Today, as Executive Chef of Lumiere F&B, Chef Tran Quoc Dat leads a culinary operation spanning eight outlets, eight head chefs and a team of approximately 120 kitchen professionals. His role reaches far beyond service, encompassing concept development, operational strategy and group-wide performance. Under his culinary leadership, the business recorded a 30 per cent revenue increase compared with the same period in 2023.

What distinguishes Chef Tran Quoc Dat is not allegiance to a single culinary style, but an ability to see the kitchen as a complete ecosystem. Flavour matters, but so do people, workflow, discipline and financial clarity. For him, opening a restaurant is only the first act. The real achievement is building a kitchen whose standards continue to hold long after the first service has ended.
