Chef Lu Thi Thuy An, also known as Anne, found her culinary direction not through ambition, but through experience. From her mother’s modest restaurant to the kitchens of El Toro, her journey reveals how discipline, doubt and mentorship can transform cooking into a personal way of life.

Long before she wore a chef’s jacket, Chef Anne understood the rhythm of a working kitchen. Growing up around her mother’s small restaurant, she spent her free time serving guests, washing dishes and preparing ingredients. Cooking was familiar, but it was never presented as a calling.

Her professional journey began for a practical reason. Chef Anne wanted to earn her own salary and become more independent. That decision led her to Pizza 4P’s Le Thanh Ton, where the pace and discipline of a professional kitchen quickly tested her resolve.

She adopted a simple rule: accept every correction, learn from it and never repeat the same mistake more than three times. It was an exacting standard that shaped her working character. Over three years, she became more resilient, precise and composed under pressure.

Yet technical growth brought a deeper uncertainty. Chef Anne began to question whether she truly loved the profession or had simply become accustomed to its demands. The answer remained elusive until she joined El Toro. What she found there was not simply another restaurant, but an environment in which she felt an unexpected sense of calm and belonging.

There, under the guidance of Chef Jaiden and alongside Diane and Teddy, Anne discovered a kitchen culture that valued character, energy and craft in equal measure. Cooking was no longer simply about transforming ingredients. It also meant transforming the self, turning impatience into patience, ego into humility and pressure into calm.
