Born in Vietnam to a Vietnamese–French family, Alain did not grow up in a professional culinary environment. His earliest influence came instead from his grandmother’s rustic meals, prepared with instinct, restraint and an intimate understanding of ingredients. Those dishes became his first lesson in the emotional power of food and the way flavour can preserve memory long after a meal has ended.
Paris gave that instinct structure. After training at Le Cordon Bleu, Alain entered the demanding world of French gastronomy, encountering influential chefs including Alain Passard and Meilleurs Ouvriers de France Eric Briffard, Jacques Maximin and Fabrice Prochasson. Their kitchens sharpened his understanding of seasonality, precision and discipline, while revealing that technique carries its greatest force when it serves a clear point of view.
He continued his development in Michelin-starred restaurants across Europe, including Arpège, Le Taillevent and OLO Helsinki, before completing a Master’s degree in Culinary Arts at École Ducasse Paris. The experience refined more than his technical ability. It gave him the confidence to question convention and begin defining a culinary language of his own.
That language became clearer upon his return to Vietnam. As co-founder and Head Chef of Aiii House Saigon, Alain approaches Vietnamese ingredients through the precision of classical French training without allowing technique to eclipse their character. His dishes are contemporary, but never detached from their origins. Familiar flavours are reframed with sensitivity, carrying traces of family and cultural memory.
For Alain, cuisine is not simply an arrangement of ingredients. It is a form of authorship. Every plate becomes a negotiation between what he inherited abroad and what he rediscovered at home.
Paris provided the vocabulary; Saigon provided the soul. Through his precise and deeply personal vision at Aiii House Saigon, Chef Alain Pham continues to plate his history, offering diners not just a masterful meal, but a beautiful journey home.
