Born in Marseille, the bustling port city of southern France, Pierrick Maire grew up in a region where food was inseparable from daily life. Family gatherings were always defined by the Mediterranean’s bounty—fresh seafood, vibrant vegetables, and seasonal harvests that celebrated nature’s rhythm. These early influences instilled in him a profound respect for honest, ingredient-driven cuisine and a love for flavours that carry both memory and meaning.

Guided by admiration for the great masters of French gastronomy, particularly Auguste Escoffier, Maire set out to refine his culinary craft. He entered the demanding kitchens of Michelin-starred restaurants across France, where he spent more than a decade mastering precision, discipline, and the artistry of balance. These formative years forged the foundations of his culinary philosophy: that technique and creativity must always honour the natural quality of ingredients.

Seeking broader horizons, his career took him to Asia, where he embraced new culinary landscapes in Beijing, Taipei, and Shanghai. In these vibrant cities, he adapted his French training to the expectations of international diners while remaining true to his roots. One of his proudest professional milestones came in Shanghai, where under his leadership a restaurant successfully retained its Michelin star—a recognition of both his consistency and his vision.

Today, as Executive Chef of Truffle Saigon on the 73rd floor of Landmark 81, Vietnam’s tallest building, Pierrick Maire creates elevated dining experiences that combine French tradition with global perspective. His philosophy remains simple yet powerful: without exceptional products, there can be no exceptional cuisine. Every dish is crafted with this ethos in mind—sourcing the finest ingredients and transforming them into elegant, memorable expressions of taste.
