A Return to Home
When Flavours Become a Pathway Back to Memory

On 29 May, An Lam Retreats Saigon River invites discerning diners to embark on A Return to Home, an evocative culinary experience curated by Chef Nghiêm Minh Đức. More than a dinner, it is a journey through memory, where familiar Vietnamese flavours are reimagined through a contemporary lens while remaining deeply rooted in their origins.

Rather than pursuing technical spectacle or culinary complexity for its own sake, A Return to Home draws inspiration from the most intimate fragments of Vietnamese life: the gentle breeze drifting across a river, the scent of earth after rainfall, the warmth of an old family kitchen, and the humble ingredients that once graced everyday meals. These seemingly ordinary moments become the foundation of an extraordinary dining narrative.

Set against the tranquil backdrop of the Saigon River, An Lam Retreats Saigon River provides the perfect setting for this immersive exploration of taste and nostalgia. Here, ingredients are treated with restraint and respect, allowing their natural character to shine through. Contemporary techniques refine and elevate each element without compromising the authenticity that gives it meaning. The result is a dining experience that feels sophisticated yet comforting, elegant yet deeply familiar.

Adding another dimension to the evening is Belami, the Vietnamese craft rhum brand whose creations celebrate the richness of local terroir. Inspired by Vietnam’s sugarcane fields and crafted with a profound respect for the land, Belami’s cocktails offer more than balance and complexity. Each glass captures a sense of place, transforming regional ingredients into nuanced expressions of memory and identity. As guests take their first sip, they are gently ushered into a sensory journey defined by flavour, emotion, and connection.

The experience begins with Born & Grow, an amuse-bouche inspired by cultural exchange and personal memory. A delicate pani puri shell encases stir-fried corn with dried shrimp, avocado mousse, and butter-seared tiger prawn, creating a dialogue between international culinary influences and distinctly Vietnamese flavours. It is a thoughtful opening chapter that introduces the evening’s central themes of heritage and transformation.

Next comes River Breeze, a vibrant composition of Japanese scallop, sesame rice cracker, kumquat, basil oil, and mint gel. Bright citrus notes accentuate the natural sweetness of the scallop, while aromatic herbs evoke the refreshing sensation of a breeze skimming across the water’s surface. The dish captures the rhythm and vitality of river life, an enduring presence within Vietnam’s cultural landscape.

If River Breeze offers lightness and movement, The Soil invites a quieter reflection. Featuring wild mushrooms, lotus seed mousse, fresh turmeric, and crispy betel leaf, the dish celebrates ingredients that have long been woven into Vietnam’s agricultural heritage. Prepared with a minimalist philosophy, each component retains its integrity, revealing layers of warmth and depth that speak of the land itself.

The emotional centrepiece of the evening arrives with Peace, a masterfully balanced main course of Amacore black cod grilled in pandan leaf, accompanied by fermented rice and a beurre blanc infused with rice paddy herb and aged fish sauce. Richness, fragrance, acidity, and umami coexist in harmonious equilibrium, reflecting a principle deeply embedded in Vietnamese culinary tradition, the pursuit of balance, both on the plate and in life.

The journey continues with Home, perhaps the menu’s most nostalgic expression. Australian beef short ribs, slow-cooked for 36 hours, are paired with smoked eggplant purée and garden herbs. The subtle smokiness recalls the aromas of traditional kitchens, places where generations gathered, stories were shared, and family bonds were strengthened. More than a dish, it is a tribute to the emotional heart of the Vietnamese home.

To conclude, Insight offers a delicate and contemplative finale. Combining young coconut, taro, mulberry, and crispy glutinous rice cracker, the dessert is light yet memorable, allowing flavours to linger gently long after the final bite. Like the retreat itself, it leaves behind a sense of calm and quiet reflection.

With A Return to Home, Chef Nghiêm Minh Đức crafts more than a menu. He creates a deeply personal narrative, one that invites guests to rediscover the beauty of familiar flavours, reconnect with cherished memories, and find, through food, a pathway back to the places and moments that shape who we are.
