With more than three decades of culinary mastery, Chef Ivan Barone unites authentic Italian tradition with the vibrancy of Vietnam. At Namo Restaurant, he brings the soul of Tuscany to Saigon, crafting dishes that are refined, heartfelt, and rooted in the timeless spirit of Italian hospitality.

Born and raised in Italy, Ivan Barone embodies the values of Mediterranean cuisine: freshness, simplicity, and respect for ingredients. His professional journey spans over 30 years, built upon classical training and enriched by experiences in kitchens where technique and heritage are held in the highest regard.

In 2014, he arrived in Vietnam, joining Park Hyatt Saigon as Chef de Cuisine before later leading the culinary programme at Hôtel des Arts Saigon. These years introduced him to the richness of local produce and the dynamism of Saigon’s dining culture, inspiring him to harmonise Italian traditions with Vietnamese influences.

Since 2015, he has directed the kitchen at Namo, shaping it into one of Ho Chi Minh City’s most celebrated Italian dining destinations. His philosophy is grounded in honesty and restraint: great food does not need unnecessary embellishment. Instead, he lets quality ingredients and precise technique guide the experience.

Signature creations such as squid ink tagliolini, lobster linguine, and wood-fired Neapolitan pizzas reflect this balance of elegance and authenticity. Every menu is anchored by handmade pasta, seasonal produce, and the rustic soul that defines true Italian cuisine, yet presented with a contemporary sensitivity that resonates with today’s diners.
