More than a menu, this is a narrative expressed through ten gemstone cocktails, each layered with its own story, technique, and emotional resonance.

An ode to transformation and time, the collection unfolds in three elemental movements—Awaken, Ember, and Stillness—echoing the rhythm of nature and the human spirit. Crafted by Mixologist Le Ngoc An, each cocktail blends global technique with Vietnamese nuance. For An, a cocktail is never just a drink; it is a moment suspended in time, where aroma, taste, and emotion converge.

Awaken, the first movement, invites the senses to come alive—ideal for those seeking a light, curious beginning. The journey begins with Agate, a herbaceous composition made from sous-vide Green Chartreuse infused with thirty distinct botanicals clarified through filter paper to remove solids – resulting in a herbaceous, dry, and elegant drink. As conversation begins to unfold, Emerald follows with pandan-washed rum and hazelnut, lifted by tonic fizz, as a fresh, tropical echo. Malachite, layered with cucumber syrup, basil foam, and clarified citrus, offers notes of both familiarity and surprise, like a whisper of Vietnamese gardens in bloom. Closing the set, Beryl lends toasted floral elegance to the air, and is perfect for guests who prefer subtlety, grace, and clarity in their cocktails.

Rutile makes a smoky entrance: Tequila and Ardbeg whisky with Agave Nectar and a shimmering smoke bubble for an instant conversation-starter. Coral, with its umami-laced blend of Bacon Vodka, Clarified Tomato Juice, Crafted Chili Oil and Sea Salt, evokes both nostalgia and bold newness, striking a chord with epicureans and adventurers alike. As the evening deepens, Brown Jasper offers a comforting close, Vietnamese Coffee Foam resting atop White Cacao and Belvedere Vodka, the perfect companion for long stories, quiet reflections, or intimate moments.

Heliodor adds brightness with Crafted Infused Banana Flor de Caña, Elderflower, ideal for guests easing into nightfall or relishing the final rays by the sea.
