Chef Trung began his culinary journey in 2012, working as a preparation cook in traditional Vietnamese kitchens. His early responsibilities were simple but essential: cleaning ingredients, preparing raw produce and supporting senior chefs through the daily rhythm of service.

These formative years taught him the value of patience, discipline and consistency. Rather than seeking quick recognition, he progressed steadily through the kitchen, learning each stage of the profession from the ground up. Over time, he moved into more senior roles, eventually becoming a Head Chef responsible for menu development, kitchen operations and team leadership.

Throughout his career, Vietnamese cuisine remained at the centre of his work. He became especially interested in the cooking traditions of Northern Vietnam, known for their subtle seasoning, careful balance and strong connection to seasonal ingredients. For Chef Trung, traditional food is not something to be preserved behind glass. It is a living part of culture, shaped by memory and everyday life. His approach begins with understanding the original character of a dish before considering how it might be adapted for a modern dining room.

A defining chapter in his career came at Renaissance Riverside Hotel Saigon. Within the international setting of the hotel, Chef Trung was given the opportunity to develop a contemporary Vietnamese menu that connected local heritage with the standards of modern luxury hospitality. This experience allowed him to explore Northern Vietnamese cuisine with greater depth. He studied traditional recipes, regional flavours and familiar cooking methods, looking for ways to preserve their identity while refining their presentation.

His philosophy is rooted in authenticity and respect for indigenous ingredients. Locally sourced produce, herbs and spices are not simply alternatives to imported products; they form the irreplaceable foundation of his culinary language. This respect for ingredients guides every stage of his creative process. Rather than masking familiar flavours beneath unnecessary complexity, he uses progressive techniques to reveal their character more clearly. 

In Chef Trung’s hands, modernisation is not about distancing Vietnamese food from its origins. It is about creating a new way of seeing what has always been there. A humble ingredient can be presented with elegance. A traditional recipe can enter a luxury dining room without losing its warmth. A familiar flavour can feel newly inspiring while still carrying the emotional resonance of home.

His approach is defined by continuous learning. Despite more than a decade in professional kitchens, Chef Trung remains committed to studying emerging techniques, improving his understanding of ingredients and challenging his own assumptions. This curiosity allows him to refine his work without abandoning the cultural foundations that give it meaning.

In 2025, he was named Ngon Master of Marriott International Vietnam, an achievement that recognised both his technical ability and his dedication to Vietnamese gastronomy.
