Starry, Starry night

Chef Sun Kim’s restaurant Meta, which recently moved to its new premises on Keong Saik Road and earned back its one Michelin star, set the stage for UOB’s private dinner for their Reserve Cardholders. Guests were treated to flutes of Astoria Luxury Kingdom Gold sparkling wine as a welcome drink before settling into their seats to enjoy the specially prepared dishes by Sun's culinary brigade.

Accompanying the French-Asian cuisine were wines from Siro Pacenti, which were brought in by CornerStone Wines and selected by Dr. Cristian Maddalena, export manager of the winery. The food was paired with the estate’s Brunello vintages, whose grapes come from 35-year-old vines planted in the vineyards' mineral rich clay soil. 

Dinner kicked off with a beautiful beetroot-glazed foie gras, which was followed by the Argentinean prawn with butternut squash and corn. The latter went well with an elegantly floral Brunello Pelagrilli 2013. The famed Iberico Secreto followed next; the elusive cut was served with daikon, shishito peppers and celeriac, and accompanied by a Brunello Vecchie Vigne 2013. 

The Brunello Vecchie Vigne, one of Siro Pacenti's most established labels, made another appearance with the 2012 vintage, with a strong expression of balsamic notes (as compared to 2013's fresh red fruit) which made for an excellent partner to unctous beef shortrib

The last wine of the night was the elusive Siro Pacenti PS Riserva 2012. Only 4,500 bottles of this vintage were produced, and its elegant and potent nature is befitting of the North Montalcino vineyard it hails from. The toasted spice bouquet was the perfect companion for Meta's dessert of buckwheat, chocolate and truffle.
